Purple Sweet Potato

T bought purple sweet potato today. It was made by Ibaraki. T steamed the potato for dinner. It was completely purple and good taste! I love that.

Purple sweet potato is refered sweet potato. Even Inside of the potato is purple. It has a lot of foodstuffs such as beta-crotene, vitamin C, Kalium and magnesium, regard foodstuff is anthocyanin, it is more than sweet potato.

Anthocyanin is purple pigment, and also blueberry has it. One of polyphenol, it's regarded building block because it has strong antiocidant properties.
